
Gluten-free, Dairy-free Rice Pudding
Gluten-free, Dairy-free Rice Pudding
Ingredients
3 cups non-dairy milk 1 cup Minute rice, uncooked ¼ cup sugar ¼ cup raisins ¼ tsp salt 2 eggs 1 tsp vanilla 1 tsp cinnamon
Steps
1Put saucepan on stovetop
Add milk, rice, sugar, salt, and raisins
Bring to a boil while stirring
Reduce heat to medium-low
Simmer for 6 minutes
2Stir once in a while
Beat eggs in a bowl
Add vanilla to bowl
Slowly pour eggs into saucepan
Stir
3Cook on LOW heat for 1 minute
Remove from heat
Let stand for 30 minutes
Sprinkle with cinnamon
Enjoy!
