Veggie Sushi
Ingredients
1 ½ cups sushi rice 1 ¾ cups water 3 tbsp rice vinegar 1 tbsp sugar 1 ¼ tsp salt 2 cucumber 1 bunch green onions 1 avocado 2 carrots

Steps
1In pot, mix rice and water
Boil and cook for 9-10 minutes
Caution- it is hot!
2In bowl, mix vinegar, sugar, and salt until dissolved
3Pour mixture over rice and mix well
4Slice avocado and green onion into 1 1/2 inch long pieces
5Peel carrot and cucumber and create thin slices
6Get small scoop of rice and roll into ball
Place rice ball at the end of the cucumber slice
7Lay 1 carrot slice, 1 avocado slice, and 1 piece of onion on rice ball and roll up cucumber
Enjoy with soy sauce
