Veggie Sushi

Ingredients

 1 ½ cups sushi rice
 1 ¾ cups water
 3 tbsp rice vinegar
 1 tbsp sugar
 1 ¼ tsp salt
 2 cucumber
 1 bunch green onions
 1 avocado
 2 carrots

 

Steps

In pot, mix rice and water

Boil and cook for 9-10 minutes

Caution- it is hot!

In bowl, mix vinegar, sugar, and salt until dissolved

Pour mixture over rice and mix well

Slice avocado and green onion into 1 1/2 inch long pieces

Peel carrot and cucumber and create thin slices

Get small scoop of rice and roll into ball

Place rice ball at the end of the cucumber slice

Lay 1 carrot slice, 1 avocado slice, and 1 piece of onion on rice ball and roll up cucumber

Enjoy with soy sauce

Yields1 Serving
