Nectarine and Grain Salad

Ingredients

 ¾ cup pearl barley
 ¼ cup currants
 ¼ cup red wine vinegar
 ¼ cup virgin olive oil
 120 g packet baby rocket leaves
 4 white nectarines
 ½ cup pecans

 

Steps

Cook barley in a pot of boiling water for 30 minutes.

Drain.

Cook currants and vinegar in a small saucepan for 1 minute.

Cut nectarine into wedges.

Mix cooked barley, nectarine, and rocket in bowl.

Add pecans, red wine vinegar and currants, an olive oil.

Enjoy!
