Thai Lettuce Wraps with Peanut Sauce
Ingredients
½ cup shredded carrots 2 tbsp soy sauce 3 tbsp finely chopped red bell pepper ¼ cup peanut sauce bibb or butter lettuce leaves 1 tsp ground ginger 3 cups fully cooked frozen or refrigerated diced chicken 3 tbsp crushed peanuts ¼ cup sliced water chestnuts
Steps
1Heat up chicken in microwave according to package instructions
Carefully remove hot food from microwave, using pot holder
Cut chicken into small pieces
2Wash and dry red bell pepper and lettuce leaves
Chop red bell pepper into very small pieces
Measure all ingredients
3Mix all ingredients except lettuce together in large bowl
Spoon chicken mixture into lettuce leaves and serve!
