Vegetable Soup

Ingredients

 1 small onion
 1 clove garlic
 1 tbsp olive oil
 1 bag frozen vegetables
 28 oz can diced tomatoes
 4 cups broth
 15.50 oz can cannellini beans
 1 handful parsley
 ½ lemon
 1 tsp Worcestershire sauce
 ½ tsp salt
 ¼ tsp black pepper

 

Steps

Wash hands

Chop onion

Chop garlic

Put pot on stove- medium heat

Add 1 Tbsp olive oil

Add onions and garlic

Saute for 2 minutes

Add salt and pepper

Add frozen vegetables

Add tomatoes and beans

Add 4 cups of broth

Turn heat to high- bring to boil

Turn heat to low- simmer 10 minutes

Chop parsley

Squeeze lemon

Turn off the heat

Add Worcestershire sauce and lemon

Use ladle to serve

Top with parsley

Caution- it is hot!
