Chicken Enchiladas
Ingredients
rotisserie chicken green chiles enchilada sauce tortillas 1 cup shredded cheese 1 cup Greek yogurt canned diced tomatoes
Steps
1Wash hands
Set oven to 350 degrees
Spray 9x13 pan with cooking spray
2In a bowl, add 2 cups shredded chicken, chopped chiles, and tomatoes
3Stir together
Add 1 cup Greek yogurt
Add 1 cup shredded cheese
Stir together
4Scoop sauce into tortillas
Put into pan
Add chicken mix to tortillas
Roll up in pan
5Add salsa
Put into oven
Cook 30 minutes
Add cheese to top
Cook 5 more minutes to melt cheese
