
Fruited Brisket with Apricots and Apples
This recipe is adapted from Joan Nathan's recipe in "The New American Cooking" (Alfred Knopf).
Fruited Brisket with Apricots and Apples
Ingredients
6 lbs brisket salt 2 large onions 4 cloves garlicUse more to taste (optional) 2 apples 1 cup dried apricots 1 cup dried plums, pitted ½ cup dried cranberries pepper 2 tbsp vegetable oil 1 tbsp ground ginger 12 cups apple juice 12 cups canned broth
Steps
1Put brisket on cutting board
Pat dry with paper towels
Score fat with knife
Salt all over and set aside
Wash hands
2Get out second cutting board
Cut onions in half and peel
Cut off stem end
Slice vertically up to root
Cut off root end
3Separate onion and put in bowl
Peel garlic
Crush garlic with garlic press
Put garlic in bowl
4Wash apples
Cut out apple cores
Cut into cubes and set aside
Preheat oven to 350
5Measure 1 cup apricots
Cut apricots in half
Measure 1 cup dried plums
Measure 1/2 cup cranberries
Ingredients are ready
6Get out frying pan or Dutch oven
Put pan on stove on medium high
Pepper brisket
Add brisket to pan fat side down
Wash hands
7Cook 5 to 7 minutes
Turn brisket over using tongs
Caution- it is hot!
Cook until browned
Remove and set aside
8If pan is dry, add 2 tbsp oil
Add onions
Cook until golden brown
Turn heat to medium
9Add garlic
Add 1 tbsp ground ginger
Stir about 1 to 2 minutes
If using frying pan, transfer onions to roasting pan
If using Dutch oven, leave onions in Dutch oven
10Put brisket on onions
Add apples
Add plums
Add apricots
Add cranberries
11Add apple juice and broth
Meat should be almost covered
Cover with lid or foil
Put in oven
Bake for 3 hours
12Take out of oven and let cool
Put in fridge overnight
The next day, heat oven to 350
13Remove brisket from dish
Slice meat against grain
Cut off large pieces of fat
Return to baking dish
Cover with lid or foil
14Heat about 30 minutes
Take out of oven
Enjoy!
