
Nectarine and Grain Salad

Nectarine and Grain Salad
Ingredients
¾ cup pearl barley ¼ cup currants ¼ cup red wine vinegar ¼ cup extra virgin olive oil 5 oz baby arugula 4 white nectarines ½ cup pecans, roughly chopped
Steps
1Cook barley in a pot of boiling water for 30 minutes or until tender.
Drain and rinse with cool water.
2To make dressing, boil currants and vinegar in a small saucepan for 1 minute.
Turn off heat, add oil, and stir.
3Cut nectarine into wedges.
4Mix cooked barley, nectarine, and arugula in bowl.
5Add pecans.
Drizzle with dressing.
Enjoy!
